watermelon salad

🥄 INGREDIENTS

  • 1 big slice of watermelon
  • 1 cucumber
  • 70g chickpeas
  • feta cheese to taste
  • fresh basil or mint
  • 1 pinch of salt
  • olive oil
  • balsamic vinegar
  • optional: black rice

🥄 STEPS

Slice the watermelon and de-seed it as much as possible. Chop the cucumber and the feta, and roll the basil or mint leaves before chopping those too.

Drain the chickpeas, and add all the ingredients to a bowl. Optional: cook the black rice, drain it and let it cool if desired.

Add your dressing, stir everything together and enjoy!
